Strawberry, Ricotta &Mānuka Breakfast Toast

A wonderful thing happens when strawberries meet ricotta, lemon zest and a drizzle of Comvita Mānuka honey on sourdough bread. It is sweet, savoury, crunchy and fresh. Aka, spring food at its finest. Served cold for summer entertaining or as Sunday breakfast toast.

When fresh spring strawberries are in season you have to take advantage of the haul!

Makes 2 serves

What you’ll need:

1/4 cup ricotta cheese
1 tbsp lemon juice 
2 tsp lemon zest 


1 tsp UMF5+ Mānuka Honey and some for the drizzle
4 pieces of bread, toasted


8 strawberries, hulled and sliced

Method 

1 In a small bowl, stir together the ricotta,  lemon juice, zest, and Mānuka honey. 

2 Spread the ricotta mixture onto the  slices of toasted bread, layer strawberry  slices over top. 

3 Drizzle a little Mānuka honey over  the toast.
